Dessert for breakfast kinda person? This one is for you, we’re starting our autumn recipes with cinnamon baked apples, crushed digestives, vegan cream cheese and chopped nuts – with some oats thrown in there because this is breakfast. However, I see no reason why these apple cheesecake overnight oats couldn’t technically be a dessert too.

This recipe contains 12g of protein, 9g of fibre and 517 calories. Each serving contains 2.5mg of iron, a quarter of the recommended daily amount of B1 and just under 20% of the recommended daily amount of calcium.

Ingredient choices and substitutions
I used Nush cream cheese for this recipe which is almond based and has a natural sweetness. If you want to opt for another cream cheese alternative it may alter the taste slightly. The biscuit choice is slightly more important – the Schar ones are quite firm, so they don’t get soggy even with the cream layer on top, certain softer brands may not work as well.
As for the nuts, pecans or walnuts would be best and complementary to the cinnamon apples, but chopped almonds would be nice too.

Keep your oats in a sealed container and keep refrigerated for up to three days.

Ingredients
- 2 gluten free vegan digestives I used Schar
- 50 g vegan cream cheese I used Nush
- ½ cup gluten free rolled oats
- 2-3 tbsp non-dairy milk
- 1 tbsp chopped nuts
Apples
- 1 medium granny smith apple peeled and cubed
- ½ tbsp light brown sugar
- ½ tsp ground cinnamon
Instructions
- Preheat the oven to 175°c (350F).
- Peel, core, and slice the apples into thin slices, then cut the slices in half. Toss the apple pieces with the sugar, cinnamon. Bake the apple filling for 15 minutes. Remove from the oven and set aside to cool.
- Meanwhile, prep the rest of your dish.
- Crush your digestives then pour them into the base of the container you’ll be using.
- Add your oats and cream cheese to a mixing bowl, add the milk until you reach your ideal consistency. Less milk will make a thicker cream, I opted for about 2 tbsp. When the apple has cooled, mix that in with the oats and dairy alternatives. Add the mix to the jar with the crushed digestives, then sprinkle with the chopped nuts. Place the lid on your jar/ container and place in the fridge.
